Tastiest sourdough ever!

Initially feeding the starter was fiddly! It is a very small portion and I found using an expresso cup, coffee scales and a chopstick the best utensils for the feedings and then an old, clean mustard jar as the volume was higher. I also found it better to add the bottled water first to the starter, mixing it in bit by bit, followed by the flour.

As I had been using his rye starter method for years, I didn’t want to change to using a white flour starter so once I had fed it enough I then made a rye starter from it which took several feedings again to get it perfect. Now I have the tastiest sourdough I have ever made from this starter and bacterial background with Heinrich feeding it with different flours from all over the world.

The rye starter keeps perfectly well in the fridge for a week or even more and I usually bake weekly. The discard from this is saved also in the fridge and used to make rye bread.
PS the scoring is not great because I was using a sharp Japanese knife having given up on Chinese razor blades in my lane! So even more sharpening required!
